1 3/4 Cups all-purpose flour
1 1/4 teaspoons baking powder
1/2 teaspoon baking soda
2/3 Cup sugar
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1/3 cup shortening
2 eggs
2 Tablespoons Milk
1 cup mashed ripe Banana
1/4 chopped nuts
Preheat the oven to 350
Fill muffin cups about 3/4 full, bake for about 8 minutes, (more or less depending on your oven) or until wooden pick inserted near center comes out clean. Remove from pan and enjoy warm or cold.
This recipe makes one dozen, so I usually double it.
Feel free to add more banana, it will make the muffins more moist.
