Lemon Coconut Pixies


These cookies are sooooo good, and so easy to make,With only eight ingredients They are light and delicate, and remind me of summer.


 1/2 cup (1 stick) Butter or Margarine, softened.
2 Cups Granulated Sugar 
4 Eggs
1 Tablespoon Freshly grated lemon Peel
3 Cups All-Purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
2 Cups Sweetened Coconut flakes
Powdered sugar

Makes about 48 cookies                    Heat oven to 320 F
Beat butter, sugar, eggs and lemon peel in a large mixing bowl until well blended. 



Stir together flour, baking powder and salt: 
 



   Gradually add to lemon mixture, beating until well blended.
Stir in coconut.
 Shape into 1-inch balls; roll in powdered sugar. Place cookies 2-inches apart on ungreased cookie sheet.
Bake for 12-15 minutes or until edges are set. watch them carefully, they burn easily.
 Immediately remove from cookie sheet to wire rack. Cool completely.
 Makes about 48.
